Well the truth of the matter is, I go with Derek to Idaho Falls and watch him ref 3 to 7 basketball games all afternoon and then after we go shopping or out to eat. It's really the "after" part that I look forward too. It's hard sitting there alone for so long, but I keep myself busy reading, watching, walking around or being on my phone. As long as we're together right :)

As for me, I tried a new recipe! Chocolate covered cake-batter truffles!
They are to die for! And they were super easy, which is a major plus.
I found the recipe on a blog called "Love Veggies and Yoga." This lady has a lot of great recipes and projects. Find the full recipe here.
To start, I purchased a box of vanilla cake mix, sweet and condensed milk and vanilla. The recipe also called for agave nector, but I didn't have any so I just added more s&c milk.
Once I combined all the ingredients, I froze the dough for 15 minutes. After, I rolled the dough into small balls. The recipe said to make them smaller than you think, because they double in size once you coat them in chocolate.

After the dough was all rolled into small balls, I put them back in the freezer for another 15 minutes. While they were chilling, I melted the chocolate.
Once they were done chilling, I rolled two or three balls at a time in the chocolate. After they were all rolled in the chocolate, I put them BACK in the freezer and let them set. Let me tell you, the hardest part about this whole process was the waiting!!!


That's it! They were super easy to make and super delicious. I served them the next day at FHE and everyone loved them. Next up, Chocolate covered OREO truffles!
